Ingredients

1/4 cup white sugar (60 mL)
2 tbsp cornstarch (25 mL)
1/2 tsp lemon juice (2 mL)
2 cups Ontario Coronation grapes (500 mL)
2 squares, puff pastry, thawed (397 g)
1 egg yolk 1
1/4 cup icing sugar (60 mL)

Directions

1. Preheat oven to 450°F (232°C).

2. In a medium-sized saucepan over medium-high heat combine sugar, cornstarch, lemon juice and grapes. Simmer for 5 minutes. Set aside to cool.

3. Sprinkle work surface with flour. Roll out one square (200 g) thawed puff pastry into 9 x 9 inch square. Cut into 4 smaller squares. On a parchment lined baking tray, spoon 2 tbsp (25 mL) of grape mixture onto center of each small puff pastry square. Fold each in half diagonally to form a triangle; press the tips of the triangles together to seal and brush with egg wash. Repeat with the second square of puff pastry.
