Maple Cherry Sauce

Drizzle over freshly made waffles or pancakes to create a gourmet breakfast feel at home

Ingredients

 

1 medium orange
1 can tart cherries, drained, (or 1 1/2 cups frozen tart cherries) (16 oz)
1 cup maple syrup 250 mL
1 cup cherry juice blend or apple-cherry juice 250 mL
1/2 cup coarsely chpped walnuts, optional 125 mL

Directions

Rinse orange; remove blemishes from rind. Grate rind until you have about 1/3 cup. Save remaining orange for another use.

In a large saucepan, combine grated orange rind, cherries, maple syrup and juice. Cover and bring mixture to a boil, then lower heat and simmer 10 minutes to blend flavors.

Remove from heat and stir in walnuts, if desired.

Cool, then cover and refrigerate. Sauce will keep 3 to 4 days; reheat before serving.
