Plums in Yogurt and Honey

“For this very simple dessert, I was inspired by Greek cooking and the delicious mixture of honey, yogurt and pistachios. Plums can be substituted with other fruit such as peaches, nectarines or apricots and yogurt, for fresh cream or mascarpone.” ~ Hélène Laurendeau

Ingredients

 

3 tbsp unsalted butter 45 ml
2 tbsp honey 30 ml
8 to 12 Ontario Golden or Blue plums (depending on size) halved and pitted 8 to 12
thick plain or vanilla yogurt
2 tbsp crushed pistachios, unsalted 30 ml

Directions

In skillet, melt butter and honey. Place plums (flat side down) and cook over medium heat for 6-7 minutes. Turn gently and continue cooking over low heat, until plums are well cooked.

Place warm plums in four bowls and top with reduced cooking liquid. Garnish with two or three spoons of yogurt, to taste, top with crushed pistachios.
